Jon Jay will likely be batting leadoff for KC, all but locking him in to a high number of plate appearances. Getting a bunch of cracks at Giolito is obviously appealing, and a high number of plate appearances positions Jay well to benefit from the strong offense around him, with runs scored and RBI opportunities.
Jay's production isn't anything special, but dating back to 2017, he has a passable .323 wOBA against righties. In a matchup this good (4.69 implied total), his spot in the order is enough to create plenty of value, especially if you're trying to pay up for Chris Sale.
